Degustation

Two Brothers can provide a truly unique experience.

For the ultimate dining experience let us create a degustation menu for you. We can match food to those special bottles of wine or offer advice on wines to match around some of our favourite dishes. We can also offer what we call a ‘stand-up’ meal. These menus give you the opportunity to have an extensive choice of canapés, larger morsels and dessert choices – without being confined to a table. This allows the party to keep flowing and gives you and your guests the opportunity to try a very large variety of dishes.

SAMPLE DEGUSTATION MENU

Amuse guelle
Seared scallop, truffled cauliflower puree, salmon roe.
First Course
Flathead rolled in prosciutto, fenugreek leek, brandade filled zucchini flower, smoked paprika & tomato dressing.
Second course
Asparagus tortellini, swiss brown mushroom ragout, broad beans, parmesan tuille, truffled lime nage.
Third Course
Hot & sour quail broth with poached quail egg, salt & pepper legs on a mung bean & jelly fish salad, seared quail breast & scallop with snow-pea tendrils (assiette of quail).
Fourth Course
Crisp skinned duck breast, braised leg, shallot & lotus root mille-feuille, bok choy, aromatic coffee sauce.
To Finish

Vanilla & praline bavarois, mocha mousse, green apple chips, bitter chocolate sauce.
